Muesli Bars

Prep Time: 20min | Cook Time: 20min | Serves: 2 to 4

One of the things on my wish list has been to make my own museli bars. I've tried a few times and never been successful, but my recent efforts have finally worked out! These are easy to make and you can add extra nuts or dried fruits to change the flavour.

Ingredients

  • 125g butter

  • 1/2 cup coconut sugar

  • 2 tbsp rice malt syrup

  • 1 cup (100g) chopped medjool dates

  • 1 1/3 cups rolled oats

  • 1/2 cup flaked/dessicated coconut

  • 1/2 cup spelt flour + 1 tsp baking powder

  • 1/2 cup flaked almonds

  • 2 tbsp pepitas

  • 1/2 cup goji berries/dried canberries/apricots/dried fruit of your choice or additional nuts such as sesame/poppy/sunflower/linseed

Instructions

  1. Mix together butter, coconut sugar, rice malt syrup and dates in a saucepan

  2. Simmer together for a few minutes

  3. Add the rest of the ingredients and put into a square 20cm pan and lined with baking paper

  4. Cook for 20 minutes at 160 degrees fan forced

  5. Allow to cool completely on a wire rack and cut into rectangles
