Healthy Happy Organic Sweet Corn and Lemongrass Soup

Prep Time: 30min | Cook Time: 15min | Serves: Up to 8


  • 500g Chopped Organic Brown Onions

  • 6 large Organic Corn Cobs (1000g kernels when shaved)

  • 1.5 L Filtered Water

  • 2 chopped Lemongrass Stalks (or 2 drops of doTERRA Lemongrass)

  • 10 Kaffir Lime Leaves

  • 1 Tablespoon Vegetable Salt

  • 1/4 tsp Pepper

  • Stevia to taste (optional after puree)


  1. Shave the corn kernels off the cobs

  2. Combine all above ingredients into a pot (including the shaved cobs), bring to the boil and simmer until the onions are soft

  3. Take soup off the heat,remove lime leaves and the cobs. Scrap any residue kernels off the cob with a butter knife

  4. Add the extra kernels to the pot and discard the cobs and lime leaves

  5. Puree soup and then finely strain the soup, discarding any residue pulp

  6. Bring the soup back to simmer on the stove to warm through

  7. Add a small amount of stevia or coconut sugar if necessary, as corn can vary in flavour throughout the season


  • For some specialness add 6 peeled king prawns or 100g crab meat

  • Garnish with fresh coriander leaf and serve
