Home Made Almond Milk

At our "Wellness Day" we made the most beautiful almond milk to use in a sugar-free custard. Often with nut milks (and with traditional milk) you need to add sugar to a custard recipe, but with this very clever twig of a recipe, the almond milk is sweet enough as it is.
Ingredients
1 cup Raw Almonds or Cashews
Water for soaking nuts
3 cups water
2 dates (optional)
1/2 tsp vanilla (optional)
Instructions
Soak the nuts in water overnight or for at least 6 hours
Drain the water from the almonds and discard
Blend the 3 cups of water, almonds and dates until well blended and almost smooth
Strain the blended almond mixture using a cheesecloth or other strainer
Notes
Homemade raw nut milk will keep well in the refrigerator for three or four days
