Home Made Almond Milk

Prep Time: 7hrs | Cook Time: Nil | Serves: 2 to 4

At our "Wellness Day" we made the most beautiful almond milk to use in a sugar-free custard. Often with nut milks (and with traditional milk) you need to add sugar to a custard recipe, but with this very clever twig of a recipe, the almond milk is sweet enough as it is.

Ingredients

  • 1 cup Raw Almonds or Cashews

  • Water for soaking nuts

  • 3 cups water

  • 2 dates (optional)

  • 1/2 tsp vanilla (optional)

Instructions

  1. Soak the nuts in water overnight or for at least 6 hours

  2. Drain the water from the almonds and discard

  3. Blend the 3 cups of water, almonds and dates until well blended and almost smooth

  4. Strain the blended almond mixture using a cheesecloth or other strainer

Notes

Homemade raw nut milk will keep well in the refrigerator for three or four days
